Curious Bites: Chocolate Mint Bars Entice

Happy holidays! To celebrate the winter season and the coming new year, I wanted to share an old family recipe that was first started by my great-grandmother – Chocolate Mint Bars. These bars aren’t specific to any holiday, but they’re perfect to pair with the chilly weather. 

Here are the needed ingredients for both the bars, topping, and icing:

2 eggs, beaten                                                                   1 cup powdered sugar

1 cup sugar                                                                         2 tbsp butter

½ cup butter, melted                                                        1 tbsp cream

2oz unsweetened chocolate                                          1 tsp peppermint extract

½ tsp. peppermint extract                                               1 oz unsweetened chocolate

½ cup sifted flour                                                              1 tbsp butter

Combine the beaten eggs, sugar, and butter. Beat well until fully incorporated. Blend in chocolate and peppermint extract, and slowly add the flour. Pour mixture into an oven-safe pan, preferably 9×9. Put it in the oven at 350 degrees for 30 minutes. Allow the pan to cool before adding topping and icing.

For the topping, take the powdered sugar, butter, cream, and peppermint extract and blend together. You can add a drop of green food coloring for festive decor, or you can leave it as is. Spread a layer of the topping over the cooled bars.

The icing is easy! Melt the unsweetened chocolate and butter on low heat. Pour a thin layer over the topping and let it stand for 5-10 minutes. Finally, cut the bars into one inch squares and enjoy!

I like having this desert with hot chocolate or a small scoop of ice cream. You can easily make these as an affordable gift as well. Bring a small tray for your family and friends and they will love them!
